Mexican breakfast Huevos Rancheros, a great choice for weekend brunch! Add a bit of spicy for weekend!
Ingredient:
3 Eggs
1/2 Onion,sliced
1/2 Bell Pepper, sliced
1 can Chopped Tomato
Cheddar Cheese
Parsley
Method: Heat a hot pan with oil, cook the onion and bell pepper for few mins until softened. Then add can of tomato, season with salt and pepper,(can put some chilli powder and Mexican seasoning)bring it to boil. Then turn to low heat cook for 4 mins or until the sauce become thicken. Use a spoon to make a well, put a whole egg in (total three wells for eggs), season the egg, put the lid on and cook for 3- 4 mins (depends how you like your eggs). Put some parsley and cheddar cheese on top, serve with tortilla and mexican beans.
